Bacon & Blue Cheese Smash Burgers

INGREDIENTS:

 2 pounds ground beef (80% lean, 20% fat)
 8 slices of bacon
 1/2 cup crumbled blue cheese
 Salt and pepper, to taste
 4 hamburger or brioche buns
 Lettuce, tomato, onion, and any other toppings you wish

MAKES:

4 Smash Burgers

 

DIRECTIONS:

 Step 1. Preheat your BakerStone griddle to medium-high heat.

 Step 2. Cook the bacon slices on the griddle until crispy. Drain the bacon on paper towels. Set aside.

 Step 3. Divide the ground beef into 8 equal portions and shape them into balls. Season each ball with salt and pepper.

 Step 4. Place one portion of ground beef onto the preheated griddle. Use a sturdy spatula to smash the ball down into a thin patty. Press down firmly to create a nice crust. Repeat with the remaining portions of beef.

 Step 5. Cook the patties for about 2-3 minutes on each side, or until they reach your desired level of doneness. During the last minute of cooking, sprinkle the crumbled blue cheese evenly over each patty.

 Step 6. While the burgers are cooking, lightly toast the hamburger buns on the griddle.

 Step 7. Assemble the burgers by placing a patty on the bottom half of each toasted bun. Top each patty with a slice of bacon and your desired toppings, such as lettuce, tomato, and any condiments of your choice.

 Step 8. Place the top bun on each burger, and your Bacon Blue Smash Burgers are ready to be served!
