Sponge Toffee Dipped in Melted Chocolate & Halloween Sprinkles

 

INGREDIENTS:

1 ¾ cups – White Sugar

½ cup- Corn Syrup

½ cup Water 

1 tablespoon Baking Soda

1 cup Chocolate Chips

½ cup Halloween Sprinkles

 

EQUIPMENT:

BakerStone Camp Buddy

1 Large Stockpot

Wooden Spoon

Candy Thermometer

Heat-resistant Container for Sponge Toffee

 

MAKES:              

12 Servings

 

DIRECTIONS:

Step 1. In a large stockpot, add sugar, corn syrup and water. Bring to a boil.

Step 2. Continue to boil until the mixture hits an internal temperature of 300 degrees Fahrenheit (about 150 degrees Celsius).

Step 3. Lightly grease or spray the heat-resistant container. Place a layer of parchment paper down if you are concerned about the sponge toffee sticking.

 

Step 4.  Very carefully, add the baking soda all at once and stir. Remember the sponge toffee will expand quite a bit! It will also be extremely hot so use caution and have dry kitchen rags with you! Carefully pour the sponge toffee into the greased heat-resistant container.

NOTE: Once cooled, break the sponge toffee into small pieces. Try to break them into about 1 dozen equal size pieces.

Step 5. Using a double boiler, melt the chocolate.

Step 6. Dip each piece into the melted chocolate, and then dip in your Halloween sprinkles.

Step 7. Enjoy!
