Peppercorn Seared Tuna with Grilled Vegetables
INGREDIENTS:
2 – 4 oz. Tuna Steaks
3 Tablespoons – 4 Peppercorn Blend
1 – Yellow Zucchini, sliced
1 – Green Zucchini, sliced
1 – Eggplant, sliced
½ - Green Pepper, sliced
½ - Red Pepper, sliced
½ - Red Onion, sliced
2 Sprigs Cilantro, as garnish
2 Lime wedges, as garnish
Extra Virgin Olive Oil
Salt & Pepper, to taste

DIRECTIONS:
Step 1: Preheat your BakerStone grill and pizza oven to high heat.
Step 2: In a bowl, combine all vegetables with olive oil, salt & pepper. Thoroughly coat and grill vegetables until fully cooked.
Step 3: In a pre-heated pizza oven, heat your frying pan. Toss the tuna in 4 Peppercorn spice and salt. Place in the hot frying pan with some oil. Cook for 2 minutes, flip over and cook 2 more minutes.
Step 4: Plate the beautiful grilled vegetables, top with the tuna and garnish with cilantro and lime wedges.
