Jerk Chicken Flatbread

 

INGREDIENTS:

One – 9 oz. Pizza Dough Ball

1 oz. – Jerk Paste with a splash of Olive Oil mixed into the paste

4 oz. – Cooked Chicken Breast coated in Jerk Paste, sliced

½ cup – Diced Mango

¼ cup – Cilantro leaves

 

EQUIPMENT:

Pizza Peel (Wooden)

Ladle or Large Spoon

Round Pizza Turner or Spatula

Metal Pizza Peel (Optional)

Rolling Pin (Optional)

MAKES: One 10” to 12” Flatbread

 

DIRECTIONS:

Step 1: Preheat your Oven Box for 15 to 20 minutes.

Step 2: Before you begin dust the Pizza Peel (Wooden) with flour.

Step 3: Coat pizza dough with flour on both sides and brush off the excess.

Step 4: Hand-stretch or use a Rolling Pin to roll the dough into a 10” to 12” disk.

Step 5: Placed your stretched pizza dough onto the Pizza Peel (Wooden) and then with a ladle or large spoon, add the jerk paste and spread evenly around the dough.

Step 6: Add the cooked chicken breast and mangos to your flatbread.

Step 7: Launch your flatbread into your Pizza Oven Box and cook for 1 minute, then rotate ¼ to 1/3 turn.

Step 9. Rotate your flatbread using a ¼ to 1/3 turn every 30 to 45 seconds to evenly brown your pizza.

Step 10. Remove the flatbread with the Metal Pizza Peel (approx. 2 ½ to 3 min*) or until golden brown and evenly cooked.

Step 11. Sprinkle cilantro leaves evenly over your flatbread.

Step 12. Brush the pizza edge with a little bit of extra olive oil to get nice shine, some moisture and some wonderful flavor.
